Angel food cake is made with tuns of egg whites so why is there not that much protein in the cake?
I just made angel food cake for the first time and used 20 egg whites. I figured that it would be a high protein cake, but the recipe said there is only 2 grams of protein per serving. Any ideas?
Pooh – egg whites do have protein, 3.5 grams per white. The yoke only holds 2.8 grams of protein.

Egg whites don't contain protein. It's the yolk that contains the protein in the egg (as well as the fat.)

    Actually, egg whites contain more protein than egg yolks…

    Interesting question. Maybe it has to do with the fact that the whites are whipped so much, maybe it changes the protein makeup of the eggs.

    Pooh have you never heard of people eating just egg whites for protein. If you don’t know the answer don’t just put in some crap. Not really sure if this answers the question, but is sounds like it does.

    The physical stress of beating the egg white can create a foam. There are two types of physical stress caused by the beating of the egg whites with a whisk, the first being that the whisk drags the liquid through itself creating a force that unfolds the protein molecules. This process is called denaturation. The second stress comes from the mixing of air into the whites which causes the proteins to come out of their natural state. These denatured proteins gather together where the air and water meet and create multiple bonds with the other unraveled proteins and thus becomes a foam holding the incorporated air into place.[11]

    Right, it’s relative to the other ingredients. so yes there is protein, but compared to all the other ingredients the percentage of protein is low. I do love angel food cake though!!

    Here is a recipe for ya! it’s a peanut butter protein cookie. It uses some whey protein, but again the amount of protein is lower than you would think. It’s much higher than any other cookie, but I thought it would be super high because I put some huge scoops of whey protein in the mix.
